Olive It holds a yearly cookery competition with Westminster Kingsway College culinary students. The finals is a live event where the young chefs cook a 3-course menu incorporating olives Spanish olive oil. A panel of 8 judges determine the ultimate winner while their family and guests cheer them on.

This year the winner was Kieran McGarrigle. I had the great fortune of choosing the right table to sit on with his parents and Norman Fu, his mentor. Kieran is only 18 and in his second year at Westminster. On the night, he produced 3 beautiful plates of food. Here’s his winning menu.

On the night, Kieran produced 3 beautiful plates of food. His menu was imaginative, used olives in the most creative way, combined unusual flavours that worked well together and plated with great artistry.  His execution of the dishes was flawless, a standard would not be out of place in a top London restaurant. He’s a name to watch. Here’s his winning menu.
