Making sushi with Sushi Shop Marylebone

I love eating sushi and quite enjoy making it too. When I try to make it at home, it always turns into a real mess, with sticky rice everywhere. I have since picked up a few tips about making sushi from a few lessons and the mess is significantly reduced but my efforts are by no means refined.

Properly made sushi is such a beautiful thing. Restaurants that serve sushi usually plate them up with such artistry from the glistening pieces of fish, perfectly formed nigiri sushi and mind bogglingly equal size portions of maki sushi, decorated with carved bamboo leaves, mounds of daikon and flowers.

We learnt a few new tricks at the new Sushi Shop in Marylebone. This is the second outlet for this European Sushi chain in London. The shop is a double fronted space with the open kitchen on one side and seating on the other. For a casual dining space, it is beautifully appointed with sleep minimalist Japanese aesthetics. On the tables are their own brand bottles of soya sauce and an intriguing sweet soya sauce, their best seller.

Executive chef Pierre came over from Paris to oversee the final details and spent some time teaching us the finer points of making a perfect piece of nigiri sushi. As the restaurant had not officially opened at this point, I was amazed that they let us loose on their pristine kitchen and untouched equipment. The knives were so very very sharp!

How to make Salmon Nigiri Sushi

Things to remember:

  • The sushi rice should be flavoured and used warm
  • There should not be too much sushi rice
  • The sushi rice should be lightly compressed, not too hard as it will break the rice grains
  • Roll the salmon or fish on gently and it should then be shaped between your fingers to a squarish shape.
  • Notice the tails of the fish on the end of the piece of Salmon nigiri.

This all looks quite uniform to me but to a trained chef, it is a bit of a mess. The sizes are all over the place but I didn’t really mind.

We then took the Salmon Nigiri a bit further by adding a teriyaki glaze and blow torching the fish lightly. This was a delicious twist to an ordinary piece of salmon sushi.

How to make Maki Sushi

We also had a go at making maki sushi using a bamboo mat. This is where I have come unstuck before. Gauging the rice to filling ratio is a tricky business. It has to be not too little and not too much or your roll will be a disaster. We did both normal cucumber rolls to practice, then a fancy inside out California roll with the nori seaweed on the inside.
The steps are: lay down a layer of rice leaving some space on the top edge. Add some cucumber in the middle evenly. Roll the mat over and compress lightly in a square shape. Release and roll it over all the way and compress again.

When cutting, it is customary to cut into 6 pieces. Wet the knife and make sure it is sharp. You don’t want to saw it, just one straight cut. Cut it in the middle first, then tidy the ends. sushi shop 048

How to make maki sushi

A beginners cutting guide to maki sushi, use the width of the knife to judge the width. This way, you will get them all the same height. Great trick.

The Sushi Shop has a very extensive menu and you can order to eat in or takeaway. Their menu has the traditional Edo sushi selection and a very inventive European fusion selection which includes a “French Touch”, Chicken Caesar and a Mango Tempura roll. They also do a spectacular London box which has 38 pieces of mixed sushi.

The Sushi Shop is a new favourite now. Shame it is not nearer to me or I would be ordering from there quite often. Do check them out.

    I’m curious about how sushi is made, so this guide is perfect to answer my questions. I noticed that the sushi that I usually get are all the same height and width, so it helps to see the trick to this. It’s interesting that this can be done by using the width of the knife to judge where to cut. That seems like a great way to make each piece of sushi evenly cut. Thanks for posting this!

Today is the UN International Day of the World's I Today is the UN International Day of the World's Indigenous Peoples. Did you know that Indigenous Peoples live in all regions of the world and own, occupy or use 22% of global land area (About 500m people who speak almost 7000 languages.  Many of them face extreme poverty and marginalisation and human rights violations. They have a significant role to play in sustaining the world's diversity of the world's cultural and biological landscape.  UNESCO works in partnership with indigenous peoples to provide support when facing all these challenges.  This pic of the Totem poles in Stanley Park, Vancouver. The shortest one in front is the  Thunderbird House Post Totem Pole. These are used to support #FirstNation cedar house beams. This pole is a replica of a house post carved by Kwakwaka'wakw artist Charlie James in the early 1900s.  Totem poles are unique to the north west coast of #BritishColumbia and Lower Alaska. Each carving tells of a real of mythical event and every carving has a meaning.  While in Vancouver, I tried to find out more about history and culture of the First Nation peoples'. #AD So glad to be able to venture out again. Vent #AD  So glad to be able to venture out again. Venturing out for a break from London, we went to explore some historic places not too far away. For a quick day trip as part of @Roadchef’s Great British Getaway, we ventured down to explore the old National Trust owned village of Chiddingstone in Kent. It's like a living museum. The whole street of Tudor buildings was bought to preserve them. You will find a well-stocked village shop that is like a throwback in time, including an old fashioned sweet shop display of pick and mix. Don't miss the tea shop in the back courtyard.  You can visit Chiddingstone Castle and its 35 acres of beautiful grounds. (swipe for more pics) The house is worth a visit for its renowned art collection.  On route, we stopped at Roadchef for some refreshments and were thrilled to find quite a few outlets open, including Chozen Noodles and Costa Coffee. We took our takeaway and had a socially distanced lunch al fresco in the garden outside. We would have picked @Leon but it was just being finished. 🔆Fun Fact : Did you know that Mushrooms can act in a similar way to human skin and produce vitamin D when exposed to sunlight.  Chestnut mushroom are the same as button mushrooms but grown for longer?? 🤯  To boost the vitamin D content of your regular mushrooms at home, simply buy your UK or Irish mushrooms and lay them in the sun between 10-3pm for around 15-120 minutes to get a real vitamin D boost.  When fresh button mushrooms are exposed to the midday light the can manufacture more than 10 mcg vitamin D per 100g mushrooms which is a substantial portion of our daily recommended intake! AD It’s midsummer. It's time for some BBQ cookin AD It’s midsummer. It's time for some BBQ cooking over an open fire. Here is my recipe for the Weeping Tiger Beef using a piece of Dry-Aged @herefordbeefuk rump steak.  I love Thai flavours and the best way to eat a lovely piece of steak is to cook it simply, here it is cooked rare, the surface is charred to perfection. Then dress the steak salad with this spicy, tangy and umami-rich dressing (nam jim jaew). It takes just minutes to cook and assemble. A delicious and super quick mid-week meal and low carb too!

#HerefordBeef Dry Aged Steak ( Sirloin, Rump or Rib Eye) 
8 cherry tomatoes 
mixed salad leaves
Coriander  Steak marinade 
1 tbsp light soy sauce

5 birds eye chillies, finger chillies or chilli powder
3 tbsp fish sauce 
3 tbsp lime juice

Accompanying the beef was crispy roast potatoes, a rich beefy gravy, beets, spinach and a side of slow cooked beef. Preceding the main, we had chaat, crab and duck heart skewers. All quite unusual, balanced slicing, perfectly cooked. Pudding was a halwa ice cream with the shortest shortbread biscuit.
