Gluten Free Almond Butter Waffles with caramelised bananas

A gluten free alternative to the normal waffle recipe. It works well with peanut butter too.

  • 2 tbsp alternative flour you can use coconut, almond, chickpea flour
  • 1 pinch of salt
  • 1 tsp baking soda not baking powder
  • 1 tsp cinnamon
  • 8 tbsp or almond butter
  • 2 eggs
  • 4 ripe bananas
  • 2 tbsp raw honey or maple syrup
  • 2 tbsp melted butter or cold pressed rape seed oil
  • 1 tsp vanilla essence
  • More butter for brushing on machine


  • Preheat waffle maker and brush both surfaces with melted butter.
  • In a large bowl, place the dry ingredients together and mix well.
  • In a separate bowl or a mixer, whisk together almond butter, eggs, 2 bananas, honey, melted butter and milk until well combined.
  • Stir in the dry ingredients and combine until the batter is smooth.
  • Ladle batter into waffle machine and cook until steam stops and waffles are golden brown and slightly crispy on the outside. On this machines it took about 4-5 minutes.
  • Repeat with remaining batter.
  • Meanwhile, in a medium frying pan, caramelise the other 2 banana in a little bit of butter until golden brown on both sides. Bananas get really sweet when you cook them like this.
  • Serve the waffles hot with the bananas on top and drizzle with maple syrup of honey.


You can make a stack of these in advance and freeze them. Just toast them from frozen for a quick breakfast.
