Gluten Free Almond Butter Waffles with caramelised bananas
A gluten free alternative to the normal waffle recipe. It works well with peanut butter too.

Ingredients
2tbspalternative flouryou can use coconut, almond, chickpea flour
1pinchof salt
1tspbaking sodanot baking powder
1tspcinnamon
8tbspor almond butter
2eggs
4ripe bananas
2tbspraw honey or maple syrup
2tbspmelted butter or cold pressed rape seed oil
1tspvanilla essence
More butter for brushing on machine
Instructions
Preheat waffle maker and brush both surfaces with melted butter.
In a large bowl, place the dry ingredients together and mix well.
In a separate bowl or a mixer, whisk together almond butter, eggs, 2 bananas, honey, melted butter and milk until well combined.
Stir in the dry ingredients and combine until the batter is smooth.
Ladle batter into waffle machine and cook until steam stops and waffles are golden brown and slightly crispy on the outside. On this machines it took about 4-5 minutes.
Repeat with remaining batter.
Meanwhile, in a medium frying pan, caramelise the other 2 banana in a little bit of butter until golden brown on both sides. Bananas get really sweet when you cook them like this.
Serve the waffles hot with the bananas on top and drizzle with maple syrup of honey.
Notes
You can make a stack of these in advance and freeze them. Just toast them from frozen for a quick breakfast.
