Asian Prawn Salad
A very quick, easy and tasty salad with prawns
Prep Time 10 minutes minutes Cook Time 5 minutes minutes Total Time 15 minutes minutes
- 3 medium raw tiger prawns deveined and butterflied per person marinated for 3 minutes in:-
- 2 tsp each of finely chopped chilli/garlic and grated ginger
- Juice and zest of 2 limes
- 1 tsp turmeric
- 1 tbsp rapeseed oil
- Seasoning
- Some salad leaves
- Courgettes
Marinade the prawns for about 3 minutes
Meanwhile prepare the salad
Use a slicer to make strips of courgettes
Mix the leaves and courgettes and lightly dress if preferred
Pan fry quickly in a little rape seed oil as the prawns cook quite quickly
Place cooked prawns on the salad leaves and serve
Squeeze some lime juice over the prawns and salad and serve
