Asian Prawn Salad

A very quick, easy and tasty salad with prawns

Cook Time 5 minutes
Total Time 15 minutes

Ingredients

  • 3 medium raw tiger prawns deveined and butterflied per person marinated for 3 minutes in:-
  • 2 tsp each of finely chopped chilli/garlic and grated ginger
  • Juice and zest of 2 limes
  • 1 tsp turmeric
  • 1 tbsp rapeseed oil
  • Seasoning
  • Some salad leaves
  • Courgettes

Instructions

  • Marinade the prawns for about 3 minutes
  • Meanwhile prepare the salad
  • Use a slicer to make strips of courgettes
  • Mix the leaves and courgettes and lightly dress if preferred
  • Pan fry quickly in a little rape seed oil as the prawns cook quite quickly
  • Place cooked prawns on the salad leaves and serve
  • Squeeze some lime juice over the prawns and salad and serve
