Asian Prawn Salad

This vibrant salad is one of the healthy Asian recipes we learnt at a recent LV= LoveLife cooking class. The prawns are marinaded in anti inflammatory turmeric and quickly pan fried. Put together with ribbons of courgettes and green leaves, the colours are quite stunning. This would make a very lovely starter for a dinner party. If you wanted this as a main meal, you could add more prawns per portion and add more to the salad like some lovely Isle of Wight cherry tomatoes.


Asian Prawn Salad

A very quick, easy and tasty salad with prawns

  • 3 medium raw tiger prawns deveined and butterflied per person marinated for 3 minutes in:-
  • 2 tsp each of finely chopped chilli/garlic and grated ginger
  • Juice and zest of 2 limes
  • 1 tsp turmeric
  • 1 tbsp rapeseed oil
  • Seasoning
  • Some salad leaves
  • Courgettes


  • Marinade the prawns for about 3 minutes
  • Meanwhile prepare the salad
  • Use a slicer to make strips of courgettes
  • Mix the leaves and courgettes and lightly dress if preferred
  • Pan fry quickly in a little rape seed oil as the prawns cook quite quickly
  • Place cooked prawns on the salad leaves and serve
  • Squeeze some lime juice over the prawns and salad and serve
