A fab leftover turkey recipe to serve as a canape or a side dish in a multi dish meal using hot and zingy Thai flavours

Ingredients
a few slices of leftover turkeychopped into small cubes or a pack of turkey mince
little gem lettuce
1red onion
2clovesof garlic finely chopped
1handful of corianderchopped (including the stalks)
1long red chillijulienned lengthwise or 2-3 birds eye chillies if you prefer it hotter
1tbspfish sauce or to taste
2limes cut into wedges
Instructions
In a hot pan or wok, add some oil and fry the onions for about 2 minutes until it softens
Add the garlic and stir for another minute
Season with the fish sauce, start with a little and adjust seasoning to your own taste
Take off the heat
Add in the chillies and coriander and stir fry to combine evenly
Serve on individual leaves of the little gem lettuce with some wedges of lime.
Alternatively, you can serve this as a starter in a big bowl and a separate plate of lettuce leaves. Everyone can then make their own lettuce parcels.Another alternative is to serve this with some steamed rice as a Thai Turkey rice bowl.
Notes
The recipe is flexible, depending on how much leftover turkey you have left. Alternatively, you can use a pack of turkey mince and adjust the recipe to your own taste.
